Leela’s Warm Kale, Quinoa, Edamame Salad
This is my signature dish for potlucks and picnics, and it’s always a hit! Every time I make it, people ask for the recipe, which amazes me since I just made it up one day, and it’s super easy… and economical. ENJOY!!
Supplies:
1 Bunch – Organic Kale
1 Bag – Organic, Shelled Edamame
1 Cup – Organic Quinoa (Red, White, or Combine)
Organic, Toasted Sesame Oil
Braggs Liquid Amino Acids
Raw, Organic, Sesame Seeds
COOK ALL 3 SEPARATELY
EDAMAME: (Soy beans) Follow Directions on the bag of Edamame. Usually boil for 4-7 minutes.
KALE: I often use my Edamame water to steam my kale since it’s already hot, and less wasteful than pouring it down the drain. Clean and cut or tear Kale in little bits. Then VERY lightly steam in a large pot with steamer basket and lid. (You can also make this dish with raw kale, but be sure to keep the pieces really small for easy eating.)
QUINOA: A lovely, ancient grain which has become my favorite since it is protein rich and more complete than most other grains. Use a strainer to clean the 1 cup of quinoa. Really rinse it well… this is important. Then put it in a medium sized pot, and add 2 cups of water. Bring to a boil… cover and reduce heat to low…simmer… then check it in 10 minutes. It can take up to 15 minutes of simmering to finish, but I like to check after 10 so I don’t overcook it (which I’ve done many times ;->). ** You might not want to use ALL of the quinoa in the dish. I usually do NOT, but I like to have enough, just in case… and if there is extra, it will get eaten anyway since we LOVE Quinoa!
ONCE YOUR MAIN 3 INGREDIENTS ARE PREPARED
Combine them all together in a large mixing bowl with Toasted Sesame Oil and Braggs Liquid Amino Acids to taste. Add your raw sesame seeds, and you’re good to go!
This dish is quick, easy, inexpensive, and HEALTHY. And it’s always a hit at pot-lucks or parties… ALWAYS. Your vegetarian friends will LOVE that you made it.

Yummy Vita-Mix Veggie Soup
Supplies:
2-3 Organic Tomatoes
2-3 small Stalks Celery
1 Carrot
1 Small Green Onion
1/2 Garlic Clove
Dash White Pepper
1/2 Cup – Organic Vegetable Broth
Watch the Video for further instruction. Blend on low, the quickly to high for aprox 4 minutes or until steam rises from top of blender.
Voila!! Yummmmmy!!!!
Quinoa I have not tasted but the other 2 main ingredients are staples. Thanks for sharing, I will try this!!!
